Starting your morning with a balanced, high-protein meal can help keep you satisfied for hours and fuel whatever the day brings. The best breakfast doesn’t have to be complicated - it starts with simple recipes you’ll actually look forward to making.
These high-protein pancakes are made with just a few simple ingredients: oats, egg whites, an egg, low-fat cottage cheese, vanilla, and cinnamon. Topped with your favorite fresh fruit. The result is a delicious, satisfying breakfast packed with over 43 grams of protein to keep you energized and full throughout the morning.

Recipe
½ cup oats
½ cup 1% cottage cheese
9 tbsp egg whites
1 whole egg
1 tsp vanilla extract
1 banana (optional, for extra sweetness)
Cinnamon (optional)
Instructions:
Mash 1 ripe banana in a large bowl.
Add your oats, cottage cheese, egg whites, egg, vanilla extract, and cinnamon to a blender.
Blend until the batter is smooth.
Heat a nonstick pan over medium heat and lightly coat it with cooking spray.
Pour the batter onto the hot pan and cook over medium heat until golden brown on both sides.
Top them with your favorite fruit
Finish with a drizzle of maple syrup. For a lighter option, I love using sugar-free maple syrup for all the sweetness with fewer calories.
